Pesto courgetti

This is my go to recipe at the moment, ticking all the boxes for taste, inclusion of vegetables and speed of preparation. Anything that is simple and quick and this yummy, while also being quite good for you, is bound to quickly become a staple in your repertoire.

First up was to spiralize one courgette with the spiralizer. Simples.

 

This can then be made into a hot or warm salad. To warm the courgettini, I sautéed it in a pan with a drizzle of olive oil. I then whipped up the dressing of a measure of pesto with half a measure of lemon juice and half a measure of olive oil. This was stirred through the warmed courgettini, et voila. 

Total yummers. And all in about the time it takes to make a cup of tea.
